Brewing Sake in a Historic District that Harnesses Kyoto’s Water and Climate

Nishijin sits in downtown Kyoto, once thriving as the home of Nishijin-ori, a fine textile craft. Today, its rich heritage endures, with traditions passed through the ages. Established in 1893, Sasaki Sake Brewery brews sake in Nishijin in the heart of Kyoto, known as Rakuchu.

Sasaki Sake Brewery stands at the southern end of the former Jurakudai, once home to Toyotomi Hideyoshi (1536-1598), the warlord who unified Japan. Blessed with abundant pristine groundwater, this area fostered various water-related industries like sake brewing, tofu production, dyeing, and the tea ceremony. Drawing from the same springs as tea master Sen no Rikyu (1522-1591), Sasaki Sake Brewery sources its water from Kinmeisui and Ginmeisui.

Nishijin, Where the Spirit of Old Kyoto Lives On

While Fushimi is renowned for sake today, Kyoto's sake brewing roots lie in its center. Kyoto's basin geography, surrounded by mountains, collects high-quality groundwater, stored in underground bedrock reservoirs. Nishijin also saw sake flourish due to being able to select rice, an ingredient essential for sake brewing, from the annual tribute rice that gathered in Kyoto, Japan’s old capital.

At the brewery, craftsmen known as "kurabito" oversee the sake brewing process. These experts are well-versed in every step, from soaking the rice to bottling the sake, and will explain in depth both the process and the tools involved. You can witness nearly every aspect of sake production at Sasaki Sake Brewery.

The storehouse maintains a cool temperature regardless of outside conditions, thanks to its traditional features like high ceilings, mud walls, and ventilation windows, crucial for optimal sake brewing. Sasaki Sake Brewery preserves handmade techniques while embracing innovation. They have adopted a centrifuge to separate the unrefined sake mash (moromi) without pressurizing it, resulting in a smooth aroma and clean taste.

During your visit, you might get to stir the sake base with a long wooden stick or observe the jōzō process, where fermented moromi is strained into clear sake and sake kasu (sake lees). As sake is made through a complex process, the production stages you witness may differ depending on the time of year.

A must do! We love sake and to go to the brewery, meet the lead brewer was great. Everyone’s passion that works there definitely shows the Japanese culture. The behind the scenes experience, was just an ordinary tour of “here are the barrels” this was hands on and super in depth. 5’s for the most part. Only thing I would say is highlighting the “seasonality” of production. We missed the production time (actual rice processing, steaming and such) was starting in October. We would do it again with you, it was that fun and knowledgeable.

Where we are from, people usually put the best rating when "everything was perfect"- what was promised was delivered, and it perhaps exceeded expectations. I have no idea what could have made this experience better than it was. Everything was amazing, however the visit of the brewery and the presentation of the world of sake and its history with Kyoto by such an enthusiastic professional was truly exceptional. It was eye opening and extremely informative. It reminded me how even aspects that are apparently shared across many cultures (here alcohol making and consumption) could be interpreted completely differently and come with really different expectations. Had we tasted sake without all these precious explanations, we could have left with a surface level understanding of its culture and missed what makes these sake exceptional. The translating part was priceless in this experience! I felt that informations but also the professional’s feelings could come across. It was worth it from beginning to end! So far one of the best experiences I had in Japan. The ability to go deeper into a subject and to exchange thoughts and feelings made this experience memorable.

A unique cultural hands-on experience of a traditional way to learn and taste of nihonshu from a 100+ years old brewery. Everything was amazing! The sake master and interpreter were very open to answer questions and have many attentions to us. There were plenty of memorable moments during the experience: 1) when we could place the brand label/ sticker to our souvenir bottles of sake 2) When the sake master gave us a couple of artistic pottery cups 3) when we could see the fermentation process directly from a cauldron.
